8 La Campera Flour Tortillas

6 large eggs

2 tablespoons of milk

1 tablespoon of butter or oil
Salt and pepper, to taste

4 slices of bacon, chopped

2 cups of diced potatoes

1/2 cup of shredded cheddar or Monterey Jack cheese

In a large skillet over medium heat, cook the chopped bacon until crispy. Remove and set aside, leaving about 1 tablespoon of the bacon fat in the pan.

Add the diced potatoes to the skillet. Season lightly with salt and pepper. Cook over medium heat for 10–12 minutes, stirring occasionally, until tender and golden brown. Remove from the pan and set aside.

In a bowl, whisk together the eggs, milk, salt, and pepper.

Melt butter (or add a little oil) in the skillet over medium-low heat. Pour in the eggs and cook gently, stirring occasionally, until soft and fluffy.

Heat the flour tortillas in a skillet for 20–30 seconds per side, or wrap in a damp paper towel and microwave for 20–30 seconds.

Divide the eggs among the tortillas. Top with potatoes, bacon, and shredded cheese. Add salsa, avocado, or other toppings if desired.
