2 pounds of Birria with its both

1 pound of Chihuahua cheese

Can (15 oz.)
1 finely chopped onion, for garnish

Cup (4 oz.)
Finely chopped cilantro, for garnish

1 lime for garnish

Heat the birria with its broth.
Step

Remove the meat from the broth and chop.
Step

Pour a little vegetable oil onto a hot griddle or skillet.
Step

Using a ladle, add some of the birria broth and heat the tortillas on both sides (you’ll notice them starting to turn red).

Add the cheese and birria to the tortillas and fold them in half. Cook them for 5 minutes on high heat until the cheese melts and the tortilla begins to crisp, then remove from heat.

Serve some birria broth in a glass, garnish with cilantro, onion, and a squeeze of lemon. Enjoy!
