1 pound chicken breast

1 bell pepper, chopped

1 onion, sliced

6 cups of mixed salad greens

1 carrot, sliced

2 avocados, diced

Tsp.

1 teaspoon of fajita seasoning

Tbsp.

2 tablespoons of lime juice

4 tablespoons of cooking oil

Season the chicken with fajita seasoning and lime juice.

Heat olive oil in a skillet over medium heat. Cook the chicken for 6-7 minutes per side, or until fully cooked. Let it rest and slice into strips.

In the same skillet, add a little more olive oil and sauté the bell pepper and onion for about 5 minutes, until tender.

Brush oil on both sides of the tortillas.

Place the Burrito Tortillas in oven safe bowls to form a bowl shape. Bake at 375 for 10 minutes.

In a large bowl, toss the salad greens, carrot slices, avocado, and cooked vegetables. Add an equal amount to each of the 4 tortilla bowls.
